Presentation

Lemoss represents the history of sparkling wine in Treviso, well before the Martinotti/Charmat method was first produced. Lemoss (from the Treviso dialect “le moss,” meaning “it’s moved”) is a sparkling wine refermented in the bottle, with no added sugar, produced with white and red grapes and selected yeasts. The rosé version is fresh and fragrant, perfect as an aperitif and with light vegetable and shellfish dishes. The production method is defined as ancestral and does not involve filtration. In fact, once fermentation is complete, the yeasts remain in suspension, settling to the bottom. This characteristic gives rise to the term “col fondo” or “sur lie” (on the lees) in French, which refers to wines produced in this way.
