Presentation
Torchiato di Fregona is a top Italian dessert wine, a real treat for those interested in exploring the native wines of Treviso. This sweet wine originates from Fregona, a village nestled at the foot of the Alpine foothills. It’s excellent as a meditation wine, after a meal, or paired with dry pastries or aged and blue cheeses. “Ciacoé” in the Venetian dialect translates to “chat,” with a positive twist. It’s about conversations with friends, at the table or in a tavern. Ciacoé therefore evokes a convivial moment of sharing and celebration. Torchiato di Fregona has a history spanning hundreds of years. A 17th-century legend tells of a farmer who found a way to ripen grapes by hanging them from the rafters of his barn. Over the winter, the grapes withered and sweetened. In spring, the farmer decided to press it with a press (hence the name “torchiato”), leaving the must to ferment in small barrels. He obtained a passito wine, which he decided to offer at celebrations. From then on, all the families of Fregona began producing their own press, passing down their technique from generation to generation.
